For the past century, Distillerie Jean Goyard has been perpetuating the savoir-faire of its founder through the three activities for which it is widely renowned: services for wine growers, the production of specialities and grape by-products for industry, and the manufacture of spirits and table oils for retail.
It was on the instigation of his brother, a wine grower in the region, that Jean Goyard settled in Champagne in 1911. Originally from Burgundy but an adoptive Champagne man at heart, Jean was a visionary when it came to exploiting all the resources of the vineyard and preserving the local ecosystem – in 1911 the Champagne region was in crisis and wine that couldn't be sold was poured into the ditches. At Aÿ, Jean established his first small local distillery. He would travel around the vineyards and countryside with his still on wheels, offering his distillation services to all the wine growers.

The firm of Emile Pernot, now more than a century old, has a direct lineage rooted in the origins of the famous liquor named "absinthe”, and you’ll discover that the story is rather surprising seeing the coincidences!
Indeed, the legend says that on Dr Ordinaire’s death, at the end of the 18th century, his precious original recipe for the elixir passed to two Swiss sisters from the Henriod family. They in turn sold the recipe to a Major Dubied from Couvet, who commercialized the product and, together with his son-in-law Henri-Louis Pernod, established the very first absinthe distillery in Pontarlier in 1805. Only 16 liters of absinthe were produced each day by the 2 alembics of this little distillery.
Dubied later parted ways with Pernod (who henceforth traded under the name Pernod Fils), and traded under the name "Dubied Pere et Fils".

Story of a family passion for five generations...
Up to the late nineteenth century, the members of the Roque family had carried on the tradition of distilling from father to son. Louis, the third of his generation, decided in 1905 to become independent by settling in Souillac, in the site of an ancient convent. In a short time, Louis Roque became the local specialist of plum brandy…
He soon became renowned for his expertise and the quality of his products. He started to distil for his own business, perries from plums supplied by local farmers. He kept his production into oaks casks where the spirit aged slowly, under close supervision.
In his chais located in different parts of the town, he dedicated his time to the maturing and meticulous blending, while his house, right in the heart of Souillac, was used as a shop. Louis soon became very well known.
