Fourth generation from a family of vine-growers, Bernard Defaix started with 2 ha in 1959. From this period, a method to protect the vineyard against spring frost was discovered. Thanks to this, the vine-growers could be sure to have a minimum of harvest every year and so they began to develop stable trade markets.
The two sons of Bernard have been managing the domain since twenty years or so.
Sylvain is in charge of the vinification, the ageing, the bottling and the preparation of orders.
Didier takes care of the vineyard and the general management of the domain.
Helene, Didier’s wife, looks after the administrative and the commercial part.
So, from the vine to the final customer, the family looks after all the operations!

A FAMILY TRADITION
Bersan family settled in Saint-Bris-le-Vineux many generations ago.
The strong family tradition enabled the knowledge acquired to be transmitted and preserved within Jean-Louis and Jean-Christophe Domaine.
Jean-Christophe and his father Jean-Louis keep on taking great care of the vineyards.
They have inherited, of he old vines planted by Jean-Christophe’s grand-father, Louis Bersan, more than 65 years go.
Jean-Louis deals with the trading and Jen-Christophe is in charge of vine-growing wine making and bottling. They are helped by six employees.

The Domaine Billaud-Simon is located in the vineyards of Chablis since 1815 and covers about 17 hectares. The plots of Domaine Billaud-Simon are all located in the town of Chablis. The estate currently has four grands crus, Les Clos, Vaudésir, The Preuses and The Blanchots and four first growths, Montée de Tonnerre, Fourchaume, Mont de Milieu, and The Vaillons. It also produces the Petit Chablis and Chablis, the Tête d'Or wine.

Bordenave field, located in the heart of the appellation of Jurnaçon in Monein, is one of the oldest properties in the region, operating from father to son and daughter since 1676.

The property is located in the heart of the Alsatian vineyards and produces the noblest types of wines. The Bott family does not manufacture wine, but cultivates it. The greatest care is given to the grape, all the way from the ground to the glass. The ground cover (planting grass around the vines), the ploughing and the treatment are practiced in full respect of the environment. The grape harvest is undertaken manually, and the output is monitored in order to produce high quality wines. Ageing takes place in century old oak casks. And yet, we are on the cutting edge of technology! The team knows how to benefit from the most up to date methods in wine production.
