All olives are harvested by hand, from September to December. After sorting and rinsing with clean water, the 3 colors are separated: green, purple and black. To be debittered, green and purple are being water (changed every 10 days) for 12 months. Then they are put in salt water (brine) for their conservation. Black olives are dry cured to make them disgorge and thus take away their bitterness. Within 8 months is required. For their preparation and packaging, our olives are shipped home in Provence.
