Traditional know-how since 1584. For more than four centuries, is implemented to perpetuate the expertise of a cottage industry in the development of our wines Champagne.En 1584, Pierre Gosset, alderman of Ay and winemaker, produced wines, often red, with the harvest of its own vineyards. At the time, the two wines were arguing at the table of the kings of France: the wine of Ay, and a few hundred miles further south, the wine of Beaune. Both were made from the same grape varieties: Pinot Black and Chardonnay. In the eighteenth century, the wines of Ay and the region became effervescent. Today the wines are presented in antique bottle, exact replica of the one used since the eighteenth century by Champagne Gosset. The malolactic fermentation is carefully avoided to preserve malic acid which restores the naturally fruity wine aroma.
