The creation of Cooperatives would allow the beginning of last century to produce butter to feed the cities that were developing.
The butter dish Patrick Rousseau explains his trade with simplicity and accuracy. Fruit of skimming by centrifugation, the cream is matured overnight and for 5 hours, the team is at work!
The butyrateur begins to produce fruit continuously churning butter cream. For Patrick, the quality of our butter from a particular attention to the moisture in the product that is managed by adjusting the rotational speed of the churning but especially the fact that there is very little distance between milk and butter.

Our village is located in the southwest Marne 15 km from the city of Sézanne. The soil is mostly chalky which allows us to cultivate different Champagne grape varieties including one in particular: Chardonnay, representing approximately 80% of the vineyards in this sector. All our wines are produced in the greatest respect for the Champagne tradition (with our winemaker Clement) and to the final stage where the bottle is adorned with its label.
