Daniel-Etienne Defaix has one of the oldest areas of Chablis (8 centuries to the Old Castle). For 4 centuries, Defaix are winemakers from father to son. The family estate is spread over the oldest vineyards of Chablis, there or specifically, there is Pontigny thousand years the monks made their selection to give all its nobility to the Chablis appellation.
